Welcome to Vine to Wine this is your host Linda Moran and today is Food & Wine pairing day. I want to share a favorite picnic recipe and of course the wine that goes with it.

There is nothing like a lazy summer day hike that includes a picnic. Or better yet a trip to a scenic view to watch the sun set with an elaborate picnic dinner. One of my favorite picnics is a basket or back pack loaded with an icy cold bottle of Albarino and a Spanish picnic loaf. You make this picnic loaf by hollowing out a round loaf of bread and filling it with a mixture of pulled pork or pulled chicken 

with sautéed peppers and onions and good strong cheddar cheese and your favorite seasonings. Wrap it up in two layers of foil and bake it for one hour at 400 degrees. Pull it out of the oven just prior to leaving home and wrap it in a towel. Pack it up with your wineand some fresh fruit. When you have walked as far as you can, or reached your destination, unwrap your picnic loaf and cut it with a serrated knife. It should be room temperature or just warm enough but not gooey when you cut it. It is just fabulous with the cold Albarino. If you prefer red wine take a Tempranillo or a lighter style of Rioja and simply Enjoy!
