July Colorado Proud Recipe Features Beets

Each month Colorado Department of Agriculture highlights a different Colorado product with a fabulous recipe. This month’s recipe is perfect for those wishing to be on an island somewhere, swinging in a hammock by the ocean with the palm trees swaying with a light breeze. Colorado Department of Ag Marketing Specialist Wendy White shares more
White: “Well, we’ve got beets and they are in season and you can find them now in the farmers markets. It is really amazing the different varieties. Everybody just thinks the red but there is a rainbow of colors including gold and white and then they even have the peppermint striped beets. So I encourage people to get out there and look for them. And try this Island Style Beet and Coconut Smoothie recipe. So really a unique way to incorporate beets into your diet.”
So in addition to red beets and coconut, the smoothie also includes pineapple and guava juice to add to the island taste.
Choose beets with firm, smooth skins and non-wilted leaves, if still attached. Smaller beets are more tender. Beets are fat free, low in sodium and an excellent source of folate. Look for Colorado beets at your local grocery store, farmers’ market or at restaurants across the state. White continues
