May Means Colorado Asparagus

This month, the Colorado Proud recipe showcases Colorado asparagus. Colorado Department of Ag’s Marketing Specialist Wendy White shares more details
White: “It’s time for asparagus and it’s one of those early season treats in the spring and one of the first things to grow in Colorado. So we are really excited to feature this nutritionious vegetable in our Cast-Iron Asparagus With Pecans and Brown Sugar recipe. Asparagus is good as it is but add bacon and everything is better.”
One serving of asparagus is low in calories and very low in sodium. Asparagus is an excellent source of folic acid and is a fairly significant source of vitamin C, thiamin, and vitamin B6. White continues with more about where in the state asparagus is grown.
White: “We can find asparagus pretty much every where but in Northeastern Colorado where most of the vegetable production occur is asparagus as well. Boulder County has some too but it is really that early season veggie that everyone looks forward to as a sure sign of spring.”
