Well this week, one of America's favorite vegetables-the potato-is in the spotlight here in Las Vegas, Nevada.

That's because Sin City is playing host this year to the 2020 Potato Expo. And this time around, over two thousand farmers, agri-business professionals and others from across the United States and even Canada attended.

Shelley Olsen is a potato farmers from Othello, WA and says there's good reason why the Potato Expo is so well attended.

"There's always great information and there's wonderful people" said Olsen. "There's networking opportunities. You can always learn something and the speakers are outstanding. There's always good information to be had."

She says potato farmers continue to play a very important role in America's most essential industry-agriculture.

"We are a huge industry" said Olsen. "We feed a lot of people. And I think just as growers, farmers, ag in general, it is it is an underappreciated and under known industry. And I would love for people to get to know their local farmers, to ask actually where their food comes from and to come out and see how we do things."

If you weren't able to attend the Potato Expo this year in Las Vegas, make plans to attend next year in Grapevine, TX.
