Potato-Friendly Salad Bars Feature Potatoes as Main Entree

The United States Potato Board initiative to get potato-friendly salad bars into school cafeterias has many elements to the program. USPB Global Nutrition Marketing Manager Meredith Myers shares that the USPB is providing school nutritionists with potato-friendly salad bar themes that feature the potato as the main entree.
Myers: “We’ve got a baked potato taco bar — where it is split baked potato topped with beef taco meat, on the side they can have sour cream, pico de gallo or ranch then on the salad bar there is shredded lettuce and diced tomatoes cilantro, black beans — that sort of thing. Then we’ve go another idea for a game day potato. Here we’ve got cheesy baked wedges topped with buffalo popcorn shrimp and then they top it with things that are on the salad bar. So the idea here is to use the salad bar as a topping bars or a side dish bar where the main event is the potato.”
