Cheese and Preserves

Welcome to Vine to Wine this is your host Linda Moran. Today is food and wine pairing day, and I want to share a good combination of foods and of course the wines that go with them.

In Italy I experienced a delicious treat of sliced dry salty cheese with a smear of honey on top. At first I looked at it with skepticism and them I tried it. Oh my – how delicious the combination was. Since then I have experimented with many different cheeses and sweet toppings especially when I have a wine in mind. So here you go. Blend some jarred fig preserves with a dash of balsamic vinegar. Brush the mixture atop thinly sliced dry jack cheese and enjoy it with Cabernet. Do the same with strawberry preserves and dry aged white cheddar to accompany Pinot Noir. Next, if you have a favorite dark berry like blueberries or Marion berries, find a jam and spread it on Asiaggo cheese slices to accompany Merlot. Another fabulous combination is Parmesan topped with apricot preserve alongside a bottle of sparkling Moscato or Asti Spumante or even a nice demisec Champagne. It is the combination of sweet and salty along with the fruit flavors that makes it a wonderful appetizer or as an accompaniment to any course of a meal.
