This month it’s fresh asparagus

Totta: “This month because it’s Spring and these things are popping up everywhere, we decided to focus on asparagus and we have a really good recipe for grilled asparagus from Chef Jason. These tiny green asparagus are popping up all over Colorado and that’s how you know produce season is officially starting. What we love about asparagus is that it’s fat-free, sodium-free, high in folates, and a good source of vitamins A and C. “

When buying asparagus, choose odorless stalks with dry, tight tips, and avoid limp or wilted stalks. Fresh asparagus harvests last through mid-June.
