Onions are fat free, very low in sodium, high in Vitamin C and a good source of fiber. Select onions that are firm and dry with bright smooth outer skins. Look for Colorado onions at your local grocery store or at restaurants across the state. White continues
White: "Onions are a big produce item in Colorado. We produce about 200 million pounds of onions annually and the state actually ranks sixth in the nation for onion production. We grow a number of varieties including: yellow, red, white and a lot of the specialty onions as well. Primarily they are grown in Northeastern Colorado."
