Colorado Proud Recipe Features Cauliflower
September Colorado Proud recipe brings a smoking element to this month's feature as Colorado Department of Agriculture Marketing Specialist Wendy White sharesWhite: "The Colorado Proud recipe for September features cauliflower. So we have a Low Country Cauliflower recipe and it is really an interesting one as we are smoking cauliflower in a smoker. So it has that nice BBQ taste and smokey flavor. It's a different way to cook cauliflower."
White continues with more about Colorado cauliflower.
White: "Cauliflower along with most of the vegetable crops are grown mostly in Northeastern Colorado. Most folks are familiar with the white variety although it does come in a rainbow of colors. So you can find cauliflower that are green, orange and purple. They have different nutrient profiles depending on the color. It has become a popular vegetable that people are learning to do new and exciting things with."
White continues with another opportunity in September to promote Colorado ag products.
White: "We've got Colorado Proud School Meal Day on September 14th. So we are encouraging schools to use local ingredients on their menus. We're sharing information and materials with them so they can educate school children about Colorado agriculture and healthy eating."
