June Brings Colorado Chard

This month, the Colorado Proud recipe showcases Colorado chard. Colorado Department of Ag's Marketing Specialist Wendy White shares more details

White: "This month's recipe features chard. I think people are familiar with it but often don't know what to do with it or how to cook it. So this Sweet Chili Chard with Peppers recipe is a perfect way to get started cooking this unique vegetable. So hopefully people can find the recipe on our website at coloradoagriculture.com and take a chance with chard."

The stems of Swiss chard look similar to celery and can be green, red or a mixture of red, pink, orange and yellow. Select chard with fresh green leaves, avoiding those that are yellow or discolored. Chard is fat free, a good source of magnesium and an excellent source of vitamins A and C. Look for Colorado chard at your local grocery store, farmers' market or at restaurants across the state. White: "I think the other exciting news we have this month is the Colorado Farm Fresh Directory that lists all the farmers' markets, roadside stands, u-picks, wineries and agritourism activities. We just released that and it is a free publication. We printed 110,000 copies this year and they are available at CSU Extension offices, visitors centers, welcome centers — we have a list of where people can pick up a free copy on our website at coloradoagriculture.com."
