07/12/07 More Summer Bounty

Welcome to Vine to Wine this is your host Linda Moran and wow look at all of this bounty in our gardens, at the roadside produce stands and in the grocery stores. On today's program I want to share some recipes that have come my way and the wines that worked with them. Okay so cabbage is not my favorite vegetable and if you say cole slaw to me I think of a gloppy mess of cabbage and mayonnaise. However, recently my impression changed when I had a very different and simple version of Cole Slaw made with grated cabbage and grated Walla Walla sweet onions. The dressing was mayonnaise and lemon juice. And I mean mostly lemon juice, and just a little mayonnaise, with salt and finely cracked pepper. It was delicious. And it was great with Sauvignon Blanc. It made the wine almost twice as fruity tasting as it was on its own. It was great! Another wonderful dish: poached salmon on top of a bed of lightly salted and cooked granny smith apples. It was off of the charts good!! It was lovely with unoaked Chardonnay and with a chilled dry Rose'. Lastly, I had a yellow squash casserole of all things that just left my dinner companion and I looking around for more. It was made by cooking slice yellow squash and chopped onions in lots of butter until it was very soft. The squash mixture was then combined with Italian bread crumbs and beaten eggs, mixed and baked. It was the best squash side dish I have ever had, and to top it off it was great with three different wines  an Alsace Gewurztraminer, a dry Rose and a Pinot Gris.
