Welcome to vine to Wine this is your host Linda Moran. Today is food and wine pairing day. These hot summer days have been crying out for crisp, fruity, low alcohol wines. And my vote is for Riesling with lunch or dinner. Join me today as we look at some great foods to have with Riesling. The first sip of a nicely chilled German or domestic Riesling is like biting into a perfectly ripe and icy cold peach or apple. It is just so refreshing and satisfying especially when the temperatures are high. The wines go perfectly with shellfish like fresh cracked crab and chilled shrimp and even mussels. I love Riesling with chicken that has a mustard rub and is cooked on the grill. Because of the wide range in styles of Riesling you can find one to go with just about any food. To make the best selection consider the overall intensity of the flavor of the dish that you are preparing and select a wine with an equal flavor intensity. In the case of spicy foods, such as the carry out Thai or Indian food you brought home, in order to keep from cooking, the hotter the food the sweeter the wine. I guarantee you it will put out the fire and enhance the food. If you enjoy fish with blackened seasoning on it go for a medium sweet Riesling it will work in much the same way that it did on the Thai food. I also found that I like Kabinett Riesling with a tuna fish sandwich and potato chips. So open up your mind and cool off with some Riesling this summer.
