The Colorado Proud office of the Department of Agriculture is offering a bison recipe for November.

Wendy White at the Colorado Department of Ag says Bison is also being recognized nationally this month.

White: “ There are about 400, 000 head of bison all across North America. We have a great meatloaf recipe that we’re featuring and it includes a lot of different Colorado products. The bison, eggs, onion, eggs and even some of the seasonings that the recipe calls for. So really an all Colorado recipe for November. And with bison meat a good tip to remember is that it is high in protein and a very good source of iron but it will cook faster than beef so its recommended that you cook it on a little lower heat and watch it carefully so that it doesn’t get over done. “

According the USDA Ag Census of Colorado, there are about 70 farms with about 4300 head of bison in the state.

And if you’d like to check out Colorado’s wild buffalo herds there are a few to consider. The Buffalo Herd Nature Preserve and the Rocky Mountain Arsenal National Wildlife Refuge both short drives from Denver. The Laramie Foothills Bison Conservation Herd is another option north of Fort Collins.
