09/08/05 Food and wines - Apples

Welcome to Vine to Wine this is your host Linda Moran and today is food and wine pairing day. With summer coming to an end, and the fall season just around the corner, we are seeing many fresh fruits in the market. Here in the northwest we are already picking apples. Let us look at a few things that we can do to include apples in our dinner and of course find a wine to go with it. Although many of us just think of an apple as a quick and easy snack I like to think of it also as a wonderful aspect of a more savory dish. Anything that employs curry whether it is mayonnaise or a hot spicy curried vegetable or chicken dish works well with the addition of apples. And to truly bring out all of the great flavors in the curry there is nothing like a nice semi-dry gewürztraminer. In the fall an easy side dish is to sauté cabbage onions and apples together  in this case I prefer granny smith apples. The dish goes very well with grilled chicken and a nice Sauvignon Blanc. If you like smoked trout then blend an apple with some lemon juice and a dash of creamy horseradish to make a lovely condiment for the trout. It works well with dry riesling if it is by itself  if you are making a smoked trout salad put it on arugula and serve it with the apple horseradish sauce and a nice crisp Pinot Gris. Go through your cookbooks and you are certain to find many desserts that incorporate apples. All of these desserts will most likely go well with a dessert wine that is made from riesling. So try some creative ways of including apples in your meals this fall and enjoy the wines that go with them and thank you for joining me on today's Vine to Wine.
