White Vegetables: A Forgotten Source of Nutrients

Recently an article was published in the Advances in Nutrition publication which touted the importance of white vegetables in a nutritious diet. USPB Public Relations Manager Meredith Myers shares more.

Myers: “The headline that came out was that white vegetables are a forgotten source of nutrients. This is huge news because it supports that message that white vegetables have just as an important role on your plate as those dark leaf cousins that usually get the positive press. So white vegetables are redeemed.”

Myers shares some of the positive findings of the article.

Myers: “Color does not necessarily predict the nutritive value of a vegetable and potatoes and other white vegetables are just as important to a healthy diet as their colorful cousins. And white vegetables are nutrient powerhouses in their own right. Another message is vegetable intake including consumption of starchy vegetables like potatoes make is about half of what is recommended in the 2010 Dietary Guidelines. Potatoes can help increase the intake of short fall nutrients -- notably fiber and potassium and magnesium.”
