Obama and his wife and their administration have knocked the nutritional value of potatoes.The Alliance for Potato Research and Education (APRE) is an organization that is very helpful to Idaho potato growers in the sense that they are sending a marketing message that touts the health and nutritional benefits of such potatoes as the Idaho russet. I talked with Dr. Maureen Storey who is, APRE president and CEO: “We are totally dedicated to research and education that look at the nutritional benefits of the white potato as opposed to sweet potatoes. There are a lot of misperceptions about the nutritional value that is provided by the white potato. My mantra has been that the potato is phenomenally nutritional, it is the junk you put on the potato that is the problem. The white potato is one of the most nutritious, affordable, nutrient dense vegetables that we have in our food supply. If you compare the white potato and its potassium content versus other fruits and vegetables the potato wins. It doesn’t matter if you have baked it, roasted it, or fried it, the potassium as well as the dietary fiber are still there and in many cases because the water is not in the potato as much, the potassium is actually concentrated.
