There are still a few spots available to Idaho beef producers who want to learn more about improving the quality of their beef. BEEF 2020 is scheduled in Rexburg April 28th through the 30th. Sarah Baker of the Idaho Beef Council says this is a three-day hands-on workshop.
BAKER "The first day we're going to look at live animals and we're going to show them how then how to quality and yield grade them on a live animal basis. Then the next day we're going to focus on the carcass, the harvesting and slaughtering process and they're actually going to get a lot of hands on. We're going to put the knives in their hands and they're going to actually fabricate a front and hind quarter, get to see where a lot of those cuts come from. Then the last day Saturday we're going to focus on the whole consumer section, the palatability, the tenderness, the juiciness, flavor and some things that affect those eating characteristics of meat."
Registration for BEEF 2020 is $100 for Idaho producers and $200 for out-of-state producers and it does include meals. The University of Idaho and BYU-Idaho are co-sponsoring the event with the Beef Council.
