Food & Wine: Sushi

Welcome to Vine to Wine, I'm your host Linda Moran, and today is food and wine pairing day. Recently a friend asked about serving wine with Sushi. I have to admit that for me the answer is clear – Champagne of course! But that wasn't good enough for her. So on today's program we will explore recommendations for wines with sushi. Sushi and Sashimi, of course it does make a difference which you are serving, but for the sake of our program let's just say that we are talking about dishes prepared with raw fish. We are not accustomed to thinking about wine with these types of foods. Usually it's tea, beer, or sake. But in fact there are many possibilities. If we look at the reasons that Champagne works so well with Sushi, it will help us to identify the characteristics that we need to look for in other wines. Primarily it is the nice crisp acidity that is making things work so well together. So it stands to reason that drier Rieslings and Pinot Gris would be suitable non-bubbly wines to select. Now there are other challenges, such as soy sauce and wasabi, which can overwhelm just about any wine. But if you are using too much, chances are you are overwhelming the fish also. So just lightly sprinkle your soy sauce and dab your wasabe don't plunge into it. If those condiments are a weakness for you then try to find a nice Gewürztraminer from Alsace to accompany your meal. It seems to be the best at standing up to the challenge. I am still exploring red wine and susji myself and I have no recommendations. So - Just play with your wine combinations and enjoy your sushi or sashimi, and thanks for joining me on today's Vine to Wine!
