Fruit in Salad & Wine

Welcome to Vine to Wine this is your host Linda Moran. As the summer moves on I am eating so much fruit and I have a new salad recipe that includes cantaloupe to pair with a chilled Riesling.

Ahhh there is nothing quite like a vine ripe cantaloupe. It is fabulous sliced and wrapped in a salty slice of prosciutto ham or halved and used as a bowl for homemade ice cream. However, recently, I made a salad and included the ripe melon. It was a delight and just happened to be splendid with a simple little Washington Riesling.  The salad is a combination of thinly sliced Napa cabbage, tossed with matchstick sized slices of chilled cantaloupe and jicama and a little chopped cilantro. This is simple but the dressing is what makes it. The dressing is a combination of hot chili pepper sesame oil, lime juice, rice wine vinegar and low sodium soy sauce. The heat of the oil and the cool sweet melon are a memorable combination. And just when you thought it couldn’t get any better - you add a glass of cool semi sweet Riesling - and what a fabulous meal you have so easily created!  Remember to send your wine questions to Linda at Vine to Wine dot net and thank you for joining me on today’s Vine to Wine.
