Welcome to Vine to Wine this is your host Linda Moran and today we are answering a question from the email. Recently a listener wrote to ask "I want a recommendation for a pasta sauce that is different and will pair with most any red or white wine. Is there such a thing?
I like it when I get a food and wine pairing question that involves looking for recipes that pair well with both red and white wines. To me the perfect bridge between the two would be a savory mushroom sauce, something fairly earthy and rich. Make a Brown sauce, not a creamy mushroom sauce. No dairy other than a sprinkling of dry cheese as a garnish. Nice wide ribbon pasta is especially well suited to the dish. The sauce I make begins with caramelized onions and an array of fresh and re-hydrated mushrooms. You can easily add different flavors such as sundried tomatoes to give it a different twist. But I personally think to pull off a rich nice mushroom sauce it is best when it is pure. Seasonings such as thyme and marjoram seem to compliment the mushrooms and lend a bit to the versatility of the dish. Give it a try it really does pair well to most all red and white wines.
