08/09/07 Tomatoes & Onions

Welcome to Vine to Wine this is your host Linda Moran. Today is food and wine pairing day and it is the height of summer and my tomatoes are loving it! Plus, I still have a supply of Walla Walla Sweet onions and the two of them together are divine. Let's talk tomatoes and onions and the wines that go with them. Tomatoes, freshly picked and warm from the sun are one of my favorite summer treats. Although delicious sliced on their own, I also enjoy them tossed with thinly sliced Walla Walla sweet onions. Now please do not substitute onions others just are not the same as Walla Walla sweets. Toss the two in a splash of good quality olive oil and sprinkle with salt or fresh cracked pepper. It is a nice compliment to everything from a chilled Rose' or White blend to Merlot. I have yet to find a summer wine I don't enjoy with it. Next, you can roast tomatoes on the grill and then peel and coarsely chop them being sure to capture the juices toss it with some fresh chopped basil and slice char grilled onions. It is perfect over grilled meat or vegetables and the combinations are well suited to a domestic Sangiovese. Onions are a nice addition to an Italian Caprese salad  simply alternate a slice sweet onion between the layers of mozzarella and tomato.
