03/30/07 Saving Wine

Welcome to Vine to Wine this is your host Linda Moran. As many of you know my new favorite wine is usually the wine in my glass at the time. Today I want to be an advocate for saving wine even if it is just one bottle. Three years ago I moved. This meant moving my wine collection. During the move I discovered a lone bottle of 1994 Tokay Pinot Gris from the Alsace producer Marcel Diess. It was a wine, I had been advised to lay down for "awhile". Honestly, I forget now how long "awhile" was supposed to be. Well, I ran across it again during the holidays and put it into the refrigerator thinking we would drink it in December. Whoops! It is now late March and I have done two crazy things with this wine, I have forgotten to drink it twice and I have left it in the refrigerator waaaay too long. Well two nights ago my husband brought it into the kitchen and suggested we have it with a fish salad. I grimaced. Across the room I watched him pour it into glasses. I was scared by the color that it was oxidized. He handed me the glass and much to my surprise, the fragrance was deep and rich and full of layers of very intense mature wine with evidence of the gorgeous fruit that made it. We savored it and celebrated our good fortune. So the next time someone gives you a bottle of wine and tells you to just lay it down and forget about it  just do it - and thank you for joining me on today's Vine to Wine.
