California dairy took center stage at the International Pizza Expo in Las Vegas, where innovation and global demand for cheese-driven cuisine were on display.

The California Milk Advisory Board showcased products and concepts aimed at inspiring pizza makers, with a strong focus on its Real California Pizza Contest. Now in its eighth year, the contest highlights creative uses of California cheeses. Attendees visited the CMAB booth to explore applications and submit entries for the 2026 competition.

Live demonstrations added to the event. Past contest winners Leah Scurto and Lars Smith presented original pizzas, while Chef Barbara Alexander featured breakfast-inspired creations using California mozzarella and specialty cheeses from dairy families across the state.

CMAB also supported the International Pizza Challenge, where competitors incorporated California cheeses into their entries. “The Pizza Expo unites two vital segments for California dairy products: the pizza industry and international markets,” said Katie Cameron, Director of Foodservice at the California Milk Advisory Board.

As global pizza demand grows, California producers remain a consistent, innovative force in dairy.
