Animal-Free Mozzarella at a Pizzeria Near You?

Coming to a pizzeria near you, animal-free mozzarella? It’s a possibility.

New Culture, a company boasting its ability to combine traditional cheese-making and innovative food science to make a cheese that stretches, melts, and tastes like the real deal, has now, according to their website, submitted their product label and registration for approval by the California Department of Food and Agriculture.

The company says the top two questions they get are (1) What’s in it? and (2) How does the nutrition compare?

To answer the first, they have created an animal-free version of an ever-important protein, casein, and combined it with a number of other ingredients including sunflower oil, starch, and sugar.

For the second, they say their product is relatively similar to conventional mozzarella as far as nutrition goes with six grams of protein and 2 grams of carbohydrates per serving.

Label and registration submitted, it’s now in the hands of the California Department of Food and Agriculture.
