12/15/05 Food and wines - Onion soup

Welcome to Vine to Wine this is your host Linda Moran and today is Food and Wine Pairing Day. Since we are involved in the holidays and most of us make time to cook something special let's take a look at one of my favorite recipes for the holidays and of course the wine that goes with it. Cooking something special for the holidays can fall in to several categories  there are those things that you cook every year because that is the only time that you ever make it  and then there are the new recipes that you are trying for the first time. Well this dish falls into the tried and true category. It is a cream of onion soup and it is all about onions! Yellow onions, shallots and leeks all sautéed with garlic and then cooked down with chicken stock and white wine. Then finished with heavy cream. It isn't nearly as rich as you might imagine - but it is by no stretch of the imagination lacking in richness. The most important thing is not to serve it with anything but your favorite Fume Blanc. It is herbal enough to hold up but not to overpower this soup. It is great to serve along with a pear salad for a truly elegant dinner.
