Beef Protein For Winners

I’m KayDee Gilkey and welcome to Open Range. Here’s Greg with today’s report.

Thanks KayDee. Two weeks ago we talked with Ingri DeGroote who has completely altered her life dropping 75 pounds and becoming a marathon and endurance runner. She fuels her workouts and competitions with beef.

DeGROOTE: Beef for me and my fueling for my endurance training is the recovery and the building of muscle and that is why I choose it several times a week for my higher endurance days.

DeGroote says the recovery is huge after a long endurance run and beef helps with that recovery. And for building muscle?

DeGROOTE: A lean steak - fabulous. And I eat a lean steak a lot and I actually pre it on Sunday. I grill all of my meat ahead of time. I weight out all of my meat

That way she can quickly prepare meals and get the right amount for a serving. She shares one of her favorite recipe’s.

DeGROOTE: I like salads and kebobs. My favorite thing really is my steak salad. I actually tenderize my meat and usually pick a sirloin tip because it’s lower in fat or a top sirloin and I marinade it the night before. I choose a vinaigrette or red wine to marinade it in.

Personal Steak Salad

Marinate the night before:

5-6 oz of Sirloin Tip (Top Sirloin)

2 TBS - Water

2 TBS - Virgin Olive Oil

1 TBS - Red Wine Vinegar

1 TBS - Balsamic Vinegar

2-3 Pressed Garlic Cloves

1/4 cup onion (red or yellow)

Quinoa Salad (make the night before)

Cook the quinoa make 2 cups.

1/4 Cup - Green Onion

2 Large - Tomatoes

2 - Cucumbers

1/2 Cup - Cilantro

2 TBS - Lemon Juice

The next day: Pull your lean beef out of the refrigerator and grill!

Salad:

2-3 cups of fresh Spinach

1 Tomato chopped

1/2 Cucumber peeled & chopped

1/4 cup onion

1/2 cup of cold Quinoa Salad

Topped with Grilled Steak!

Dressing Ideas:

- Olive Oil & Balsamic

- Salsa

- 2 TBS Fat Free Cottage Cheese
