06/02/05 Food and wines - Shrimp and Rice

Welcome to Vine to Wine, this is your host Linda Moran and today is Food and Wine Pairing day! I want t o share with you one of my favorite recipes and of course the wine that goes with it. We all have our favorite recipes  you know- the ones that always come out just perfect. For years I have been making one like that. This particular dish is best when served just slightly more chilled than room temperature. I note this because if it is too cold it affects the dishes ability to really show off its flavor and pair well with wine. The dish is a mixture of rice and shrimp with garlicky creamy dressing that makes a wonderful side dish or as an entrée served with fresh sautéed peapods. It works well with lighter reds such as Dolcetto. And it is very refreshing when accompanied by a well made Rose. There are so many white wines that work well with the dish, that I am often looking more at style than varietal. Generally a white wine that is barrel fermented, but not barrel aged, is lovely. If you have a wine that has had some extended lees contact it will also go well with the rice and shrimp dish. I like Semillon done in that style.
