 Brahma bulls. I know they’re great at the rodeo but how about a Brahma steak? You might be surprised. On a recent trip to the South, I met up with Chip Howell on his ranch in Alabama. Chip is a cattleman and raises Brahmans. My only impression of these animals over the years has been that they are big, mean and tough for Cowboys to sit on for 8 seconds. That is not Chip’s only impression.  “Well I like a Brahma cow. The Brahman breed does very well south of the Mason Dixon in the deep South where we have so many days over 100° in temperature. She does so much better than the English or continental breeds and that is Angus and Hereford and Charolais and what have you.  Mined niche and one of my main interests is that since we have gotten into this genome and we can isolate genes, in the Brahman breed scientists have found genes of tenderness and that is very important. If a piece of meat is tender then enter muscular fat is the next part that makes a steak choice or even prime. With so if we can get a tender piece with intramuscular fat but not with so much fat that other scientists and doctors  will think that it will hinder the heart.”
