 Buffalo is good. Those of you who have been out East know that I’m not talking about that little city in western New York. I’m talking about the kind of Buffalo that are otherwise known as bison. 

I recently ran into a third-generation family business owner by the name of Cevin Jones. The name of the business is Intermountain Beef which is located down near Twin Falls. Intermountain Beef  is a commercial feedlot operation but is not restricted to beef. In fact the way things are going, it ought to be named Intermountain Beef and Buffalo. Here’s Cevin: .“We custom feed, feed our own cattle, and also feed bison,  that is something we got into around 2004. They are definitely different than cattle. Quite a bit of difference in how we handle them, how we treat them, how we check them for disease and sickness, there is a lot of  differences there. Probably the biggest difference is handling and how you feed them. They only gained about 1.75 pounds per day versus cattle which are gaining 3.5.” Buffalo is known to be very high in protein and low in cholesterol and fat.
