What’s a Wagyu? That’s a big question with a tasty response. I’m David Sparks and I’ll explain next.
I got a press release that said developing a Wagyu beef program to cater to niche markets was one of the topics during the annual field day at The Nancy M. Cummings Research, Extension and Education Center. That sounds pretty high-toned doesn’t it? “Niche markets.” The press release said Wade Small of the Agri Beef Co. Snake River Cattle Feeders near American Falls will talk about how the company developed a prestigious Wagyu crossbreed, which is valued in Japan for its exceptional quality and flavor. Since we can’t all attend the field day, I went right to Wade fo details on what a wagyu is. “We have a herd of full-blood wagyu cows that we use to produce full blood wagyu bulls. We lease bulls or sell semen to producers who have higher grading sets of cows. It’s American kobe beef. It’s a really high end, highly marbelled product.”
