Welcome to Vine to Wine this is your host Linda Moran and today is food and wine pairing day. I am excited to see share a cheese and wine pairing I recently discovered. I recently attended a cheese and wine pairing at Kestrel Vineyards and winery in Prosser and I got inspired by the combination of Gorganzola with a slice of fresh pear and salt with pepper on top. It got me thinking about how caramel and salt are such a great match. So I made a twist on the theme by chopping and caramelizing the pear and baking it on top of the bread with gorgonzola, then adding a light sprinkle of sea salt. Wow! It was very good and was oh so pleasing with every white wine from Riesling to Chardonnay to a Rousanne, Viognier blend. I also found that a light smear of fig paste on a thin slice of Manchego cheese is a crowd pleaser and goes very well with Syrah. Who would have thought? My mother used to stuff dates with blue cheese and I never realized how well they go with wine and how easy that is to prepare! Sp try a little sauteed pear with your gorgonzola.
