12/08/08 Trying to increase potato consumption

The Idaho Potato Commission has been spreading the word. You've probably seen the Denise Austin commercials touting the nutritional benefits of the spud. The industry took several hits with new diet ideas and misinformation, leading to fewer potatoes being eaten. DETTMAN "In 2000 it was about 138 pounds per person, and that's all potatoes, that's processed, fresh, everything. In 2008 we estimate it to be about 124 pounds per person." Economist Rachael Dettman tracks the potato industry for the US Department of Agriculture. The potato industry also knows that Americans want more convenience from their food purchases and there's been a push to stop super-sizing the fast food French fries but these are tough economic times. DETTMAN "Historically they've been a staple food and its something that people tend to resort too when food prices get expensive or when incomes decrease."
