Welcome to Vine to Wine this is your host Linda Moran. Today is food and wine pairing day and with Thanksgiving being a week from today I want to share my favorite recipe for when it is your job to provide a side dish for dinner. I volunteered to do the vegetable in a casserole.
If I am not at home for Thanksgiving or have to bring a dish to someone's home I volunteer to bring a vegetable side dish. I make a casserole from yellow squash that is simple and delicious! You simply thickly slice up about four pounds of yellow squash with 3 tablespoons of butter and salt and pepper to taste. When it is softened you remove it from the stove and combine it with two well beaten eggs, 3 tablespoons of cream or half and half and three quarters of a cup of breadcrumbs. Butter a glass baking dish and pour the squash mixture into the dish. Cover and bake in a preheated four hundred degree oven for one hour. Remove cover and bake until the top is golden brown. This is simple and it is a little sweet and savory at the same time. It is great with any white wine and with lighter styles or not too heavily oak influence red wines. It is very good leftover and can be added to a turkey pot pie in small pieces and it is delicious alongside any green vegetable you might favor. Most of all enjoy planning your Thanksgiving!
