08/28/08 Cold Soup

Welcome to Vine to Wine this is your host Linda Moran and today is food and wine pairing day. Now I know that many of us love a really good soup in the fall and winter but how many of us have embraced a chilled soup in the summer? Well wait until you hear this  you just might want to begin exploring it! Recently I had a dinner at my home planned for poolside in the backyard. Of course, as fate would have it, it was scheduled on one of the hottest days of the year way over one hundred degrees. I quickly changed plans and found a recipe for a chilled edamame bean soup. I garnished it with a dollop of cold cucumber & wasabi cream. When it came time to serve it, I gazed around the table and could see a bit of trepidation on the faces of a couple of guests. I had a sip of the wine and watched - I was now realizing what the looks were about. Not only was the soup pretty, it was so refreshing it gave us all a lift. It was fabulous even better than I could have imagined with the two vintages of Oregon's Domaine Drouhin Chardonnay. For a copy of this recipe go to the April 2008 edition of Food & Wine magazine.
