09/27/07 Food & Wine: Traditions

Welcome to Vine to Wine this is your host Linda Moran and today is Food and Wine pairing day, we are going to discuss updating a few of those very traditional recipe's that our mom's made and finding some fun wines to go with them. Let's start with a classic recipe for tuna noodle casserole. If you substitute the canned cream soup with sour cream and grated fontina cheese, add a nice amount of chopped sautéed onions and garlic to the recipe and use a more interesting shape of pasta - you will have a bit more sophisticated dish; a dish that will, in fact, go very well with Pinot Grigio or chilled Rose'. It is even good served at room temperature for lunch. Another interesting twist on an old recipe is to update your meatloaf by making it with onions, sundried tomatoes, pesto and a combination of ground beef, veal and lamb. It is very good with Chianti, Sangiovese and maybe even a Cabernet Sauvignon & Merlot blend. Making traditional food with an updated twist is fun when you combine hot and cold food such as a salad topped with marinated grilled mushrooms. Serve it with a nice Pinot Noir or a lighter style Syrah. Think about a new twist on old favorites like Chicken and rice or flank steak. Whatever you do to revive a favorite old recipe have fun finding a new wine to go with it.
