From the Ag Information Network, I’m Bob Larson. Getting Gen-Zer’s to better appreciate the different preparation options and the nutritional value that potatoes bring to the table isn’t easy.

Menu Matters president, Maeve Webster says there’s a lot of pressure on them to buy into what they read about potatoes on social media …

WEBSTER … “And as a result, if you are constantly being told that, oh, potatoes aren’t this, aren’t that, are lesser than, then sure, that’s going to tie right into your mentality. And so, we really need to change that messaging, change that conversation.”

Every type of cuisine uses potatoes so, Webster says, there are many great options to enjoy …

WEBSTER … “I think that potatoes should be and can be part of a very healthy diet. But not just a healthy diet because you don’t want to just skew towards, you know, salads and that sort of thing. But potatoes are actually one of those vegetables that offer you great, indulgent, exciting experiences as well as offer a lot of health benefits.”

Potatoes, Webster says offer almost everything you could want for almost every dining experience …

WEBSTER … “Even if you’re not trying to decrease your consumption of animal products, but are trying to increase your consumption of plant-based products, which many, many people are trying to do, potatoes are a great way to do that.”

With so many options, Webster says there’s no reason potatoes can’t be part of the Gen-Z diet.
