Welcome to Vine to Wine this is your host Linda Moran and today is food and wine pairing day. Recently I hosted WWOW - That's Wild Women on Wine and we did a cheese and wine pairing session. On today's program I will share with you some of our favorite cheeses and of course the wines that went well with them.
When teaching about cheese and wine pairing I like to have a small representation of a few good cheeses rather than being overwhelmed with too many selections. So during this recent tasting I selected a goat a sheep and a cows milk cheese with the idea that everyone would have an opportunity to taste the obvious differences. It was a good place to start. We then added a superb triple cream cows milk cheese called Explorateur as a starter cheese for people to taste as they waited for everyone to arrive. With each cheese a wine was recommended and although many of the pairings were great, there was only one clear winner. It seemed that a white Bordeaux which is Sauvignon Blanc and Semillon blended was the wine that went well with every type of cheese. That was until dessert when we served a 1975 Pedro Ximenes which is a Spanish dessert wine with a Gabriel Coulet Rouquefort. The cheese is a sheep's milk blue that on it's own is to die for but when paired with the wine and a few roasted almonds was a true match made in heaven.
