Along the Front Range of Colorado, asparagus harvest begins in May. The Colorado Department of Agriculture has put the green perennial shoots in the spotlight with its Colorado Proud vegetable for the month.

White “I always start to get really excited this time of year when we start to see those tiny green asparagus tips peaking through the ground. I think it really signals the spring produce season in Colorado. Our monthly featured recipe for Colorado Proud features asparagus. It’s a really nice simple grilled asparagus totally easy to do and a great at home recipe to do and get your grill out and brush off that dust and get ready for the spring grilling season. “

Colorado Proud’s Wendy White. The recipe is simple. A little oil, seasoning blend of your choice, at end basting it with a little locally sourced honey.

White: “It's a great side dish for pork or kabobs or anything else you have on the grill. We’re really excited to feature this first produce item of the year.”

Asparagus grows easily in a wide range of Colorado counties. It is among the cool-season vegetables that are uniquely adapted to Colorado’s climate because they are able to withstand light to moderate frosts. Asparagus is fat free, sodium free, a good source of vitamin C, high in folate, and a good source of vitamin A.
