Welcome to Vine to Wine this is your host Linda Moran and today is food & wine pairing day. As the summer sun beats down upon us it is time to refresh with some delicious cold soups. Today I want to share some ideas for cold soups and of course the wines that go with them!
The concept of chilled soup is rather foreign to some of you but think about how refreshing a cold salad is on a hot day and multiply that refreshment at least twice and you will get the idea of refreshing chilled soups are. There are some classic cold soups my favorite is Vischysoisse. Another is a classic chilled cucumber soup both soups, usually seasoned with dill, are delicious served with and ice cold Sauvignon Blanc. The more exotic chilled fruit soups are often perfect with Riesling or Gewurztraminer. But my all time favorite chilled summer soup is still gazpacho. Everyone seems to have a slightly different recipe and I must admit I haven't had one that I didn't like. This one is one chilled soup that you can actually have either a light red or a dry white wine and it will work with it. Although it is best if the red is on the lighter higher acid style rather than a big tannic earthy style.
