Baja Fresh or Chipotle?

In a recent discussion that I had with Wyatt Prescott, Executive Director of the Idaho Cattlemen’s Association, I guess you won’t be surprised that he took exception to the Chipotle Mexican Grill chain openly moving away from beef and towards tofu. They made all kinds of arguments implying that food which is not organically and locally raised or family produced is bad for your health and the planet. On the other hand, Wyatt had good things to say about Baja Fresh: “I plug which restaurants are friendly to our industry and which aren’t. Just a side note, Chipotle has a competitor with the same kind of cuisine and it is Baja Fresh and I heard a radio ad locally where Baja Fresh said that being the organic, or natural or locally raised or whatever it is... we are not worried about that. We are concerned with outsourcing the absolute best ingredients. Our mission is to produce the best quality food. I was excited to hear that commercial because they said we are not following these trends and fads and other buzzwords. We are concerned and focused on producing the best food we can. That is what we are focused on in agriculture. We are trying to produce the best quality product possible. All of this other stuff is just fads. They may work well in terms of your subconscious but in reality they are not sustainable in terms of feeding a growing population.
