National recognition of the fact that potatoes are highly nutritional.
This Friday in Boston, seven leading food and nutrition scientists will highlight emerging research and product innovations that explore the nutritional impact of white vegetables, especially the potato, in a healthy, well-balanced diet. Attendees will get expert insight on a range of relevant topics, including the latest on:
- How science-based advances in preparation methods and processing technologies affect the nutrient profile of white vegetables
- How the food group classification of white potatoes aligns with dietary guidance and policy
- Metabolic response and health benefits associated with consumption of white vegetables
It is all part of the American Society for Nutrition's Annual 77th Scientific Sessions and Annual Meeting 2013. Spokesperson Gwen Twillman, who is their Managing director of education talked with me on the phone: “We are working with the Alliance for Potato Research and Education to do a one half day program at our scientific session.” Gwen went on to regale all of the nutritional benefits of potatoes including the fact that potatoes have more potassium than a banana.
