Fisherman And Hunters Are True Locavores

I met a fellow the other day who said he explained his passion for hunting to his new wife who had been previously  opposed to the sport as providing the family with a supply of organic grass fed meat. He was a true locavore!  All of a sudden she was on board.  I’m Susan Allen when Open Range returns with high beef prices and the popularity of natural foods, there is a new food movement emerging that the  NW outdoor community is sure to love.  From a politically correct stance there couldn’t be a better time to be a hunter or fisherman  because  we are on the cusp of a new food movement that is being  called Hunter, Gather ,Cook  that’s emerged  in some of the world’s most exclusive  restaurants like Noma in Denmark where only food that has been “collected”  in the proximity of the restaurant is served.  Today you will find wild  game on nearly all upper scale  menus introducing urbanites  to the unique flavor of deer, elk, grouse and other delicacies.  The travel channel’s Wild Within show and outdoor blogger Hank Shaw’s  new book Hunt ,Gather, Cook also support the trend.  So does my  family who hunt for sport but also to keep  the freezer stocked with low fat, grass fed  free range meat . There are more species to hunt and fish in the Pacific Northwest than anywhere else in the nation thus this Thanksgiving our family decided to serve up  only fare we have caught  hunting or fishing. That will make for an interesting menu and according to some food blogs makeus  pop culture trendsetters!  I don’t know about that but we do have a lot of great stores to pass around as well
