Snow Still Falling & an Egg-citing Holiday. I’m Greg Martin with today’s Northwest Report.

The calendar shows we have been officially into spring now for one month and almost ready for May Day but in some areas of the Pacific Northwest old man winter is not giving up. Reports of snow falling as far north as Granite Falls and as far south as Auburn. There were also accumulations in the Cascade foothills. The weekend weather though looks much more seasonable...and it’s about time.

This is the time when eggs seem to be a featured item, both for hunting and eating. Americans have been cutting back on egg use recently, but that may be changing this year according to Shayle Shagam with USDA.

SHAGAM: In 2006 which was the last peak of the industry we’re basically looking at consumption on a per capita basis of about 260 eggs per capita. By 2009 that had dropped down to about 248.

But says Shagam, the low carb diet fad has waned and the firming up of the economy may see more egg use and this years numbers are remaining pretty steady at 247.
