Food & Wine - Burgers

To put it bluntly I have never been a big fan of burgers. I know it may sound un-American but it’s true. However, as many of you know I do love meatloaf. So I decided to mix up a burger in much the same way I might approach a meatloaf only more simple. So to begin with I bought extra lean beef, a real non according to my burger loving friends but this is my burger not theirs. To that I added finely chopped sundried tomatoes that were soaking in olive oil. I poured about two tablespoons of that olive oil in too. Then I added some pesto and pressed garlic, salt and fresh ground pepper. I mixed it very well so that it was thoroughly combined and set it aside to meld all of the flavors. Next I combine some canned chipotle peppers with some mayonnaise in the cuisinart and made a spread for my burger. The sauce is hot and in an effort to cool it down I do not use buns for my burger, instead I put my perfectly grilled meat between layers of fresh cold iceburg lettuce. It is absolutely delicious. Messy, but delicious. With that I like red wine, Syrah or Grenache Syrah blends and of course a slightly chilled Rioja would be dandy. Try it sometime you just might find you like it.
