Welcome to Vine to Wine this is your host Linda Moran and today I could resist having another Food & Wine pairing day. I want to tell you about a special dish using baby vegetables and of course, the wine that goes with it.
I recognize that if I keep an eye on my vegetable garden I can pick zucchini and green beans and lots of squash while it is still very small and very sweet and tender. The first course of a meal I recently created was made by braising these vegetables braised in a most delightfully light and brothy sauce made with chicken staock and just a touch of butter. The presentation was simple and the result was simply lovely. We selected a Chassagne-Montrachet to accompany this course. The combination was stellar! Chassagne-Montrachet is a French wine from the area of Burgundy known as Chassagne-Montrachet. Nowadays about 60% of the wines from Chassagne-Montrachet are white. They are made from Chardonnay and are among the best in Burgundy, even in France they are becoming increasingly popular. Cruise your cookbooks for a nice braised vegetable recipe and serve it with a reputable Chassagne-Montrachet and just try wiping that mmm mmm good smile off of your face.
