02/07/08 Cauliflower Soup

Welcome to Vine to Wine this is your host Linda Moran. Today is food and wine pairing day and it is winter and that means comfort foods like soup. Today I want to share my recipe for Cauliflower soup and of course the wine that goes with it. Well as the winter is droning on in Washington state wine country, we have been enjoying lots of soup at our house. Last week I impressed myself by making a big head of cauliflower into a delicious soup. I broke the head of cauliflower into pieces and steamed it until it was just tender. I sautéed a chopped white onion and some slivered garlic in olive oil until the onions were transparent. I then alternate cauliflower pieces with scoops of sautéed onions mixture and 3 cups of chicken stock and 1 cup of half and half in the blender, pulsing it until it was just mixed not too smooth. I combined all of the batches and reheated it in a soup pot over medium heat making certain not to boil it. Add salt and white pepper to taste. The first night it was fabulous when served with toasted garlic bread and a crisp Fume Blanc. Two days later we added some grilled sausage on the side and enjoyed it with Pinot Noir. It was so simple and oh so delicious. Who would have thought cauliflower and wine could be so good together?
