A problem for one part of the beef industry is actually a challenge for another segment of the industry. I'm Jeff Keane; I'll be back right after this with some details.
E. coli 0157:H7 is a big problem for the beef industry. Preventing E. coli contamination of meat products is a top priority of beef processing. This problem becomes a challenge to research and development segments of the beef industry. Research has found reducing the number of bacteria in pre slaughter cattle is the best way to diminish the incidence of E. coli in beef products. To accomplish this, feed rations have been modified, probiotics have been fed, antibiotics and bacteriophages have been used. A new weapon added to this arsenal is a vaccine. A Canadian biopharmaceutical company, Bioniche Life Science Incorporated, has developed an E. coli 0157:H7 Type III Secreted Protein vaccine that now represents the most effective method of reducing E. coli at the feedlot level. Three doses, three weeks apart show a 36.5 percent reduction in the number of days the bacterium was shed in the feces and a significant reduction in the actual number of bacteria shed giving the vaccine an effectiveness of 99 percent. With this major assist and continued emphasis on cleanliness during processing and handling along with proper preparation and storage of beef products, E. coli risk should be minimal. I'm Jeff Keane.
