Welcome to Vine to Wine this is your host Linda Moran and today is food and wine pairing day. Recently I help a friend prepare food for our WWOW meeting - That's Wild Women on Wine. On today's program, I will share with you some of our favorite dishes and of course the wines that went well with them. I like to have a small representation of a few good cheeses rather than being overwhelmed with too many selections. So during this recent meal we selected a goat cheese and white bean spread along side a nice ripe Cambazola cheese wedge. It was a good place to start and worked well with the blended house red wines being served. We then moved on to dinner and a Tuscan bread salad served on a bed of arugula. Arugula is a green that has just enough spice to really set off the seasonings in the salad and create a bridge to the Cabernet Franc accompanying it. The entrée was a shredded chicken and green olive stew. The green olives were in this case the portion of the recipe creating the magic with the wines, the crisp tart yet savory flavors were great with both Cabernet Sauvignon and Sangiovese. In case you aren't getting the gist of this the element that seemed to make an entire evening of red wine work with all of our food was the acidity of the dishes we served.
