Next Generation Food Trends
After two years of being virtual, the National Peanut Board got to meet with guests recently at The Culinary Institute of America for the Next Gen Food Summit. This event brings the industry together – chefs, recipe developers, food service directors, food media, and Gen Z content creators – to learn and adapt to the tastes of the next generation.
Coming out of that, I did have a chance this week to talk to Lauren Highfill Williams. She is the Director of Communications at National Peanut Board...
"So in particular we're talking about Gen Z and Millennials, of course. And we're finding that comparatively to other generations, they're more globally focused, more socially aware, and more adventurous when it comes to food."
And one of my favorite discussions, they talked about food trends...
"We had an expert from Flavor & The Menu magazine share that some interesting trends include charcuterie and then also banana-inspired desserts are having a moment. And, of course, particularly when you think of peanuts and peanut butter, that pairs really nicely with bananas, so a lot of fun there as well."
