Leo Ray, owner of Fish Processors of Idaho, learned recently that his business won a $300,000 grant from the U.S. Department of Agriculture to promote his caviar nationwide. Ray received a Value-Added Producer Grant, designed to help farmers advertise new products and build economies in rural communities. I called up Mr. Ray and asked him..."Is this caviar that you produce as good as the Russian's caviar? The reports we get consistently, there are 300 pounds a year that I have produced for the last 6 years, is that we have the best farm raised sturgeon that is produced anywhere. That is because of the fresh springs and the Idaho water. No one else has the quality of water that we have from these springs. The Russian Beluga is supposed to be the best caviar in the world. The customers are telling us that ours compares with Beluga.
